While rummaging through her mom’s recipe book, Juliet stumbled upon this handwritten recipe, much to her delight, and ours too! On a chilly morning, Juliet’s tweets about her plan to bake banana bread (with a twist) caught our attention. We had to know how this dangerous combo of chocolate and banana bread would turn out.
Needless to say, it was a success. Juliet had her whole Twitter following wanting to come around for tea. We just had to share her delicious finding with our readers. Juliet’s Chocolate Chip Banana Bread is our featured recipe for this month. Thanks Juliet, we will think of you with every bite!
Ingredients:
250g plain all purpose flour
2 teaspoons baking powder
125g unsalted butter, softened
1 cup castor sugar (250g)
4 ripe bananas, mashed
2 eggs, lightly beaten
1 teaspoon vanilla essence
175g dark / milk chocolate chips
Method:
- Preheat your oven to 180 Degrees Celsius.
- Sift the flour and baking powder into a large bowl.
- Mix the butter, sugar, banana, eggs, vanilla essence and chocolate chips in a separate bowl.
- Add to the dry ingredients and stir to combine. Don’t over-mix!
- Pour the batter into a greased and lined 19 x11cm loaf tin and bake for 1 hour – 1 hour and 15 minutes, or until a skewer comes out clean.
- Leave to cool in the tin for 5 minutes before turning out onto a wire rack to cool.
- Enjoy warm with a spread of butter, or on its own with a cup of tea J
As well as being incredibly delicious, this recipe is also very simple to make. Most of the ingredients it calls for can usually be found in any family kitchen, and the method is very straightforward – making it great to bake with the kids too.
