Charming Chocolate Chip Meringue Recipe

Do you have a sweet craving that you just can’t seem to satisfy? Or do you need a new idea for a party treat? These chocolate chip meringues will probably do the trick. They are so easy to make and are absolutely delish! Perfect for a tea party, dessert or just a simple treat!

Here is the recipe. Let us know how yours turn out. Happy baking!

Ingredients

1 egg white (at room temp)
1 cup of castor sugar
2 tablespoons of boiling water
1 teaspoon of vanilla essence
1 teaspoon of white vinegar
1 teaspoon of baking powder
½ a cup of chocolate chips

Method

Preheat the oven to 125 degrees Celsius. Mix all the ingredients, except the baking powder, together with an electric beater. Beat until the mixture is white, thick and glossy. Then fold in the baking powder and chocolate chips. Place large spoonfuls of the mixture on a sprayed/greased tray, leaving enough space in between to allow for the meringues to expand. Place a couple of chocolate chips on the outside of each meringue to add to their appearance once they are done. Bake at 125 degrees Celsius for approximately 1 hour.  Don’t allow the meringues to turn brown. Leave to cool.

Variations

  • Instead of adding chocolate chips, one can use white chocolate chips, broken chocolate pieces or chocolate shavings. I would actually love to try Lindt chocolate chips!
  • Melted chocolate can be poured over the meringues once baked for a different look.
  • Various nuts such as Hazelnuts, Almonds and Pecans can be sprinkled on the meringues just before baking for a nutty taste.
  • These chocolate chip meringues can be crushed up and sprinkled over vanilla ice-cream to add a sweet crunch!
  • This meringue recipe (with or without the chocolate chips) can be used when making Pavlova. Instead of placing the mixture in spoonfuls, spoon the mixture onto the tray and form a mound. Create an indentation in the middle of the mound for holding the filling once the meringue is baked. Bake and then fill with fruit and whipped cream. For individual Pavlovas, just create many meringue mounds instead of just one.
  • This meringue recipe (with or without the chocolate chips) can also be used as the topping for a Lemon Meringue Pie. Spoon the meringue mixture over the lemon curd mixture just before baking.
